Want to Share Us with Your Co-Workers?

We love sharing our story with folks and there is no better place than a company’s heath fair. If you have a health fair coming up, please be sure to introduce us to your HR department or the department putting on the event. To show our appreciation, we will give you a FREE local box if we set up a booth!

Veggie Unearthed: Mini CucumbersCucumbers_Mini

Your mini cucumbers came to us from Beli Farms in Wellbourn, FL — less than 100 miles from most of our customers’ homes.

Grown in a greenhouse from non-GMO German seeds, Beli Farms offers cucumbers months before they are available in the fields. We generally include mini cukes in our boxes from January through July of each year. With less than 10 calories per half cup, this mild flavored veggie is a perfect for snacking. Pair with hummus, add to a smoothie, or top your salads with these crunchy little guys. No need for cooking! However, did you know that you could bake cucumbers? Julia Childs put together a couple of variations: Baked Parslied Cucumbers and Baked Creamed Cucumber recipes!

Do not store your cucumbers on the counter as they will get soft very quickly. Cucumbers can stay fresh and crisp for about 5-7 days, but only if you store in the veggie drawer of your refrigerator. They can also be frozen if they are prepared in brine prior to freezing. You can get more information on freezing cucumbers in this step by step recipe at allrecipes.com.

Reduce, Reuse, Recycle!

Returning your produce box clean and undamaged means that we can use it again and again. This keeps costs down, minimizes landfill waste and keeps your carbon footprint smaller. Boxes that aren’t returned will incur a $5.00 replacement fee, so be sure to put it out for pickup!
