Veggie Unearthed: Yucca

Your Yucca Root came from Siembra Organic in SW Gainesville, FL — less than 100 miles from most of our customers’ homes.

Yucca is a starchy root most commonly grown in tropical climates and popular in Asia and South America. Here in the US, we may know Yucca as Tapioca. Yes, as in Tapioca Pudding. Those little pearls of Tapioca are just ground mashed Yucca.

This root, like many root vegetables, is high in carbohydrates and fiber. However, Yucca also provides a great source of potassium. In fact, 1 cup of yucca has nearly the same amount of potassium as 1 medium sized banana.

Now do not treat this Yucca as you would a store bought Yucca that lasts centuries. Store bought yucca is sterilized with bleach and then coated with paraffin (fancy word for food wax) to maintain it’s stable shelf life. Store in the crisper drawer of your refrigerator and set the humidity to low. Use your root veggie within 7 days of delivery.

Yucca has a mild flavor can be used much like a potato. You can boil, mash, stew, bake or fry the root, but cannot be eaten raw. To prepare your Yucca you must remove the skins. To remove the skins, cut of each end and then use a knife to peel from the top to the bottom, like you would a banana or a pineapple.
