In fact, it’s one of nature’s richest sources for of alpha-carotene, a carotenoid that converts to retinol, a form of vitamin A. The vibrant orange flesh and seeds of are full of antioxidants, vitamins and minerals for a healthy immune system. So roll up your sleeves, you’re about to get a little dirty scooping out the flesh.
