FPP Unearthed: Lettuce

We are so excited that the first of this season’s lettuce is finally here! Your lettuce came to us from Hoover Organic Farm  in Live Oaks, FL – less than 150 miles from most of our customers’ homes.

Did you know greens such as lettuce, chard, and beet greens need to stay hydrated to keep crisp? Knowing how to store your lettuce is very important, as the shelf life can be much longer than store bought greens if stored properly. Adding a bit of water to dampen greens and storing them in glass or plastic container will keep your lettuce looking fresher, longer.

A salad spinner is always a worthwhile investment when participating in a CSA of any kind. We have kept lettuce for up to 2 weeks by using a salad spinner. It has double duty in our kitchen — washing greens and storing greens! We know its not usually recommended, but we dampen our lettuce the day of delivery to give it a little “pick me up” and then place the entire head in the spinner. Spin gently and store the entire spinner in the refrigerator. Closing the lid with a small amount of water on the bottom, not touching the greens, is enough to keep the leaves crisp and well hydrated. Do not tear lettuce leaves until you are ready to serve. Easy peezy and saves you from throwing out limp lettuce!

Get crafty in the kitchen this week — think outside the salad box with these lettuce creations:
