Green Kale Unearthed!
Your kale came to us from The Family Garden, in Bell, Florida – less than 100 miles from most of our customers’ homes.
Kale is consistently on every list of “superfoods” that we should all get more of in our diets. A single cup of kale has only 36 calories, but provides 5 grams of fiber, 1000% of your RDA for vitamin K and 200% of your RDA for vitamin C, 180% of vitamin A, 15% of your daily calcium needs and 40% of magnesium. This amazing density of nutrition coupled with a pleasing flavor means this feel-good powerhouse is growing in popularity every day. Researchers, nutritionists and physicians have attributed kale with the power to combat disease, lower cholesterol, lower your risk of cancer and just two or three bunches can camouflage you during jungle battles against giant alien beetles. It seems there’s no downside to kale – you just have to find your favorite way to eat it!
The #1 thing we hear most about kale is how much folks love kale chips, so here’s a great recipe for Kale Chips. They even give instructions for using the chips to dust popcorn!
Storage & Prep:
Kale, like most greens, should be eaten as soon as possible. We suggest you refrigerate it unwashed in a plastic bag and use it within 48 hours of delivery. Be certain to wash your greens completely before eating them.
If you’re not going to use your kale right away, you can freeze it with minimal effort. Just wash it thoroughly then trim leaves off any tough stalks. Blanch for 1 minute in boiling water then chill in ice water for 1 minute. Drain and pack in freezer bags, remove air from bags, seal and label. Freeze for up to 6 months.
