We want you to get the most out of your Veggie Bin. Utilize every tasty bite with some of these recipes which feature every item you’ll get this week.

Important Note: This week’s peaches are from South Carolina, under our extended summer area policies. They are under-ripe, so it’s a good idea to put them on your window sill until they smell “peachy” and give a little under a squeeze.

Recipe Note: Some recipes may call for more or less produce than you receive. We feature recipes which can be doubled or halved if necessary. Enjoy!

Brewing Up New Varieties!

Many of you already enjoy the pleasures of our many artisan product options. We have been proud to offer Florida Coffee Roasters coffee for the past few years. These folks roast your coffee right here in Jacksonville! In an effort to customize your Veggie Bin experience, we are introducing our Veggie Bin signature coffee blends by Florida Coffee Roasters! These three varieties represent a spectrum of coffee flavor and body which were created especially for our customers.

Light Roast
A Brazilian bean with a nutty tone, perfect with breakfast or dessert and great with cream.

Medium Roast
A blend of three beans from Brazil, Guatemala and Papua New Guinea. Very full-bodied and rich with that earthy, chocolate/nut flavor so many folks enjoy.

Dark Roast
A sophisticated full city-roast with a smoky, tangy soul. Costa Rican and Javanese beans blend to produce this dark roasted beauty with just a hint of fruitiness.

Fairy Tale Eggplant Unearthed!

Your fairy tale eggplant came to us from The Family Garden in Bell, Florida – less than 100 miles from most of our customers’ homes.

These gorgeous little gems are creamy and delicious. It’s the perfect “gateway” eggplant for those who may have been turned off by larger, woodier or more bitter varieties. Like their larger cousins, these little guys are low in calories and full of fiber. You’ll want to store them in your fridge in a plastic bag for up to a week. If you observe soft spots or wrinkles, they are on their way out!

They are perfect for marinating whole then grilling or they make amazing appetizers for any garden party. You can use your fairy tale eggplants in any eggplant recipe that doesn’t require the size or heft of a full sized eggplant. Stir fries, kabobs, soups, stews and ratatouille are all good ideas. They can be absolutely beautiful stuffed, but keep in mind their delicate nature and keep it light. Tender, sweet and delicious fairy tales will be sure to give your pickiest eater their “happily ever after.”

Each week we’ll put our “Headline News” in your delivery reminder. You can find the rest of the great features you know and love by clicking through to our blog. Photos, tips, videos, recipes and storage info will still be just a click away at our blog on Tuesday evenings.

Many of you have already updated your information in our new system and we are very grateful. If you haven’t done so already, it’s extremely important that you log into your Veggie Bin account immediately.

On May 16th, we sent an email with your log in and password to our new online system and requested you complete some information that we could not import due to security reasons. We need you to update this information before we can bill you for your bins. If we don’t have this information, we can’t buy veggies to put in the bin, so the veggies will stop coming to your house and that would be tragic.

Please update your credit card information and create a new password that you will remember following the instructions we sent in your email. If you have ANY issues, please DO NOT create a new account because we will have duplicate accounts in our system! Just email us and we will help you.

The online system will allow you to change your recurring order, suspend for vacations, and add local artisan products to your delivery. We are very excited about the system because it will allow us to expand our artisan goods! This week we have blueberries from Brown’s Farm in our Online Shop!

Reduce, Reuse, Recycle!

Returning your bin clean and undamaged means that we can use it again and again. This keeps costs down, minimizes landfill waste and keeps your carbon footprint smaller. Bins that aren’t returned will incur a replacement fee, so be sure to put it out for pickup!
