News from The Veggie Bin

October brings in new cooler weather, new seasonal produce, and SPOOKY farm entertainment!  You won’t want to miss it this year — Now through October 28th, you get the chance to visit the 9 acre Corn Maze at Sykes and Cooper Farms in Elkton, Florida. Sykes and Cooper Farms have opened their barn doors to you and your family. Get lost in the Corn Maze, take a Hayride, visit with farm animals and see where your veggies grow! We are so excited to get started this season. And as you know, with each new season brings change. This season we have added to our Veggie Bin team! I am pleased to introduce to you the girl power behind the Bin  – Emily, Christy & Leeza (L-R). 

Christy will be packing for us (no easy task) and delivering our residential bins. Emily will be helping pack, but her focus will be our marketing. She will be preparing our newletter, blog, gathering recipes, and helping out with the educational events we attend. You may remember seeing Leeza dropping off your bin last year in Riverside, but with her recent move near the beach, she will now be delivering to her new neighbors out there! I will continue to work with our farmers, delivering to drop off points, and working the administrative side of the Veggie Bin.

This Week’s Veggie Unearthed: Fairytale Eggplant

Fairytale eggplant is a petite version of the large Italian eggplant. Substitute this sweeter variety of eggplant in soups or sautees or take advantage of the tender skin and smaller size by grilling whole! Consider these dainty white-with-purple-striped veggies stuffed as a handsome hors d’ouevre or a healthy snack. Fairytale eggplant is known to be high in dietary fiber, folate, potassium and Vitamin C.
